
Roast Eggplant Pizza

You can't go wrong with roast eggplant on a pizza.

Ingredients:
- basehead 12" frozen base 1
- chilli oil 5ml
- eggplant 400g
- fresh oregano leaves 5g
- mozzarella cheese 100g
- olive oil, some
- pepper, some
- salt, some
Cookware:
- oven
- knife
- mandolin
Steps:
- Preheat oven to 260C.
- Leave basehead 12" frozen base out to defrost at room temp for 20mins.[basehead 12" frozen base: 1]
- Thin slice an eggplant to 4mm with knife and steady hand, or a mandolin.[eggplant: 400g]
- Season the eggplant slices with salt and pepper and drizzle with olive oil.[olive oil: some; pepper: some; salt: some]
- Roast eggplant in the oven for around 5mins.
- Place roasted eggplant on pizza base, with mozzarella cheese and fresh oregano leaves. [fresh oregano leaves: 5g; mozzarella cheese: 100g]
- Cook in oven per instructions.
- Finish with chilli oil as desired. Enjoy. [chilli oil: 5ml]
