Roast Eggplant Pizza

You can't go wrong with roast eggplant on a pizza.

Ingredients:

  • basehead 12" frozen base 1
  • chilli oil 5ml
  • eggplant 400g
  • fresh oregano leaves 5g
  • mozzarella cheese 100g
  • olive oil, some
  • pepper, some
  • salt, some

Cookware:

  • oven
  • knife
  • mandolin

Steps:

  1. Preheat oven to 260C.
  2. Leave basehead 12" frozen base out to defrost at room temp for 20mins.[basehead 12" frozen base: 1]
  3. Thin slice an eggplant to 4mm with knife and steady hand, or a mandolin.[eggplant: 400g]
  4. Season the eggplant slices with salt and pepper and drizzle with olive oil.[olive oil: some; pepper: some; salt: some]
  5. Roast eggplant in the oven for around 5mins.
  6. Place roasted eggplant on pizza base, with mozzarella cheese and fresh oregano leaves. [fresh oregano leaves: 5g; mozzarella cheese: 100g]
  7. Cook in oven per instructions.
  8. Finish with chilli oil as desired. Enjoy. [chilli oil: 5ml]
